Achappam is a deep fried rose cookie made with rice flour and is a specialty delicacy from Kerala. This snack has its origins with the Syrian Christian population from Kerala and is an essential item in community events. A heated, patterned iron is dipped in the batter and then immediately dipped into the hot oil to get the crispy, patterned cookie formed as a shell around the iron.
